When you book a conference in Bryggarsalen, you can rest assured that your guests will enjoy really tasty meals, no matter whether it’s breakfast, lunch, a snack or a final dinner. Our skilled chefs cook all food from scratch using fresh raw produce that is guaranteed additive-free and which is mostly from organic farms.

On our drinks menu, our sommeliers have compiled a mix of beers from Swedish micro-breweries and carefully selected wines from near and far. Of course, we also offer alcohol-free alternatives.

ARTIC CHAR MENU

 
STARTER 
Beef tartare with smoked mayonnaise, pickled red onion, watercress salad and fried sunchoke
 
MAIN COURSE
Blackened arctic char with leek- and cauliflower puree grilled gem salad, cucumber, trout roe and dill oil and foamy langoustine sauce
 
DESSERT 
Bryggarsalens chocolate fondant with cherry sorbet
 
 
 


LAMB MENU

 
STARTER 
Duck breast with orange sauce, pumpkin puree, blackened pumpkin,
candied blood orange, rosé salad and puffed quinoa
 
MAIN COURSE 
Organic Lamb shoulder with grilled asparagus, potato fondant, onion puree, roasted tomato gravy and a ragout of coco beans, tomatoes and sobrasada
 
DESSERT 
Salty Liquorice cream with raspberry sorbet, lemon curd, raspberry,
meringues and atsina-cress
 
 
 


VEGETARIAN MENU

 
STARTER 
Rustic french salad with dried tomato, beluga lentils,
haricots verts, egg 63° C and smoky mayonnaise
 
MAIN COURSE
Grilled spring cabbage with a cauliflower puree, roasted cauliflower and grilled kohlrabi served with crisps of tuscan kale, fried capers and sage oil 
 
DESSERT 
Chocolate and tonka bean ice-cream with roasted orange muffins, orange fillets, maraschino cherries and bourbon sabayon 
 


ORGANIC MENU

 
STARTER
Blackened smoked salmon with cauliflower purée,
dill pickled cucumber, salmon tartar, oyster mayonnaise, borage and watercress 
 
MAIN COURSE
Organic farmed chicken with potato and Jerusalem artichoke
puree, spring cabbage, tuscan kale, pickled fennel and smoked
bacon served with a brown butter and lemon emulsion

DESSERT 
Swedish cheesecake with cloudberries, candied almonds and whipped cream

Gently hot smoked cod with smetana, horseradish,
blakened cucumber, fennel, trout roe and samphire
 
MAIN COURSE 
Grilled beef with pumpkin puree, roasted broccoli, smoked beef
brisket, baked leeks and cherry tomatoes served with malt vinegar sauce
 
DESSERT 
Poached plums with yogurt snow, almond and tonka bean custard,
honeycomb and plum sorbet
